    Bendakaya fry / Ladies Finger fry / Bendakaya Vepudu

    Ingredients:
    Okra / Bendakaya – 250 grams or 1/4 kg
    Oil – 2 tbsp oil
    Red chilli powder – 1/2 tsp
    Turmeric powder – a pinch
    Salto taste
    Garlic Powder – 3 pinches  or  Garlic Cloves – 1 (finely chopped)
    Fresh Curry leaves – 5 or 6
    Onion, finely chopped – 1 (optional)
    Coriander powder -1/4 tsp (optional)
    Procedure:
    Ø  Heat the oil in a pan and put the chopped okra in it, when the oil is hot.
    Ø  Stir fry it for 5-6mins.
    Ø  Keep the lid closed for the pan, and fry it on a medium flame for about 4-5mins. Check it inbetween. Remove the lid and check if the okra has turned soft.
    Ø  Add a pinch of turmeric to it and mix well.
    Ø  Keep the lid open for the pan and fry it for another 5 mins.
    Ø  Add Chopped garlic/ garlic powder for flavour and taste.
    Ø  Add Red chilli powder and salt to taste and combine well.
    Ø  You may also add finely chopped onion to the okra, which adds another kind of taste to the bendi fry, cook it under medium flame till 5-6mins, then add coriander powder, Red chilli powder and curry leaves and combine well.
    Ø  Turn the flame off and serve it with steamed rice.
    Note: Please do not mix the okra very frequently, as the okra has the tendency to split, when it is soft, Okra Seeds may appear at the top of the dish, which may damage the appearance.
